1 broiler/fryer chicken (about 3 pounds), cut into pieces
3/4 to 1 cup buttermilk
Oil for frying
For Coating
1-1/2 to 2 cups all-purpose flour
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 tablespoon paprika
1/4 teaspoon ground sage
1/4 teaspoon ground thyme
1/8 teaspoon baking powder
Recipe step by step
Step 1: Soak in buttermilk
Firstly remove all the excess moisture from your Chicken pieces patting them dry with paper towels. Pour the buttermilk over the chicken, then Cover it and refrigerate for at least an hour. For better results leave the chicken overnight.
Step 2: Coat the Chicken
Second, take a large plastic bag and add the ingredients listed for the coating, and then mix it well. Carefully place a single piece of your buttermilk-soaked chicken into the bag. Do not leave any part of the chicken without Coating. Remove from the bag and lay it on a sheet of waxed paper to dry. Continue this procedure with the remaining chicken.
Step 3: Let it rest
Give the Chicken extra time to rest at least 15 minutes you should do. During this time the moisture from the buttermilk will become evenly distributed, helping the coating adhere.
Step 4: Fry the Chicken
Now time to fry the chicken, pour oil into a deep vessel according to your quantity of chicken. Heat 1/2-in. of oil over medium heat until it reaches 350°. Carefully add a few pieces of chicken into the oil, making sure not to overcrowd the pan. Cook, uncovered, for 7-8 minutes per side.
